The invention relates to the food industry, in particular to devices for preparing ice cream. A device for making ice cream is known, which comprises a cylindrical body of the freezer, which, besides the cooling channels of the cooling channels, is surrounded by a heating jacket still provided with heating rods. The heating has such a mode and is regulated in such a way that the internal wall of the freezer will be informed of the temperature, causing partial evaporation of the initial ice cream mixture in the freezer. This steam rises through the spray pipe into the tank installed above the freezer and heats its contents to a temperature sufficient for pasteurisation (70-80 ° C). By appropriate adjustment of the thermostat, it is ensured that the inner walls of the freezer are heated above 100 ° C in order to avoid burning the semi-finished ice cream on the inside wall of the freezer. This ice cream making machine has recommended itself well in practice and has given, in particular, extremely good bacteriological results, i.e. the ice cream prepared in it is always perfect bacteriologically with Co. However, heating the contents of the tank installed above the freezer with steam produced in the freezer leads to the fact that the heating process, i.e. the process of pasteurization should take a long time, for example, an hour and a half. This duration increases even more due to the fact that the temperature of the heat transferring inner wall of the freezer should not be higher than certain temperatures that are not much higher than the evaporation temperature of water in order to prevent the initial ice cream mixture from burning. Due to the fact that the initial mixture of ice cream at this slow heating is rather long at 35 -, i.e. at a temperature of particularly strong propagation of microorganisms, the initial ice cream mixture should be kept for a long time at pasteurization temperature. This prolonged heat treatment of the initial ice cream mixture at 70 - in the tank and at a temperature of about 100 ° C or lower causes a taste change in the initial ice cream mixture, which is usually made on a milk basis. Prolonged heat treatment causes a certain caramelization of the initial ice cream mixture, i.e.; undesirable taste changes. The closest in technical essence and the achieved result to the invention is a device for preparing ice cream, containing a freezer and a reservoir for ice cream mixture associated with it, installed in the heat exchange chamber. A spatially separate freezer and tank are interconnected through the inlet and outlet pipelines in order to ensure continuous pumping 2. However, in a known device to ensure satisfactory pasteurization, it is necessary to set a rather high final temperature (about). em 1.5 hours. The temperature distribution in the tank, due to the peculiarity of heat supply, is very uneven. All this leads to a decrease in the taste of the ice cream mixture. The aim of the invention is to improve the quality of the product by eliminating taste changes when the mixture is heated. This goal is achieved by the fact that, in an ice cream maker, containing a freezer and an ice cream mix tank connected to it, installed in the heat exchange chamber, the heat exchange chamber is equipped with a recirculation blower with heating and cooling elements, and the ice cream mix tank is installed in the chamber supports to ensure full contact of its surface with the air blown by the blower and is equipped with a distribution plate for film feeding the ice cream mixture to its internal wall. In the form of a rectangular parallelepiped, the case 1 of an ice cream maker (Fig. 1) has a heat exchanger chamber 2, which is surrounded by a thick layer of thermal insulation 3. A heat exchanger chamber 2 is used to receive one CI of several transportable containers 4 for an ice mixture ice cream, the so-called semi-finished ice cream. This reservoir 4 has an outlet 6 at its bottom 5, which can be closed by means of a shut-off valve 7. The outlet 6 is located at the lowest point of the reservoir 4, therefore its complete emptying is possible by means of a corresponding inclined bottom 5 or by means of an inclined installation tank 4. The bottom 5 of the tank 4, in particular, is freely located on the narrow supports 8, so it can be freely blown with air. On its upper side, as a rule, a cylindrical tank 4 is relatively closed with a cap 9. There is an air valve 10 on the cap 9. It also has a connecting element 11 for connecting the compressed air line 12. In addition, a connecting element 13 is installed approximately in the center of the cover 9 for connecting the flexible discharge line 14 for the initial ice cream mixture. On the inside of the mat 9, the connecting pipe 15 is connected to this connecting element 13, which ends somewhat inclined to the walls 16 the reservoir 4 of the distributor plate 17. On the front side of the housing T there is an insulated door 18, through which the reservoir 4 can be inserted into or removed from the heat exchange chamber 2. In the heat exchange chamber 2 is installed cooling and heating unit 19, which has the usual cooling 20 and 21 heating elements. On one side of the unit 1 is a recirculation blower 22, which consists of an electric motor driven fan. A cross-flow blower 22 drives the air through the cooling and heating unit, where it is heated according to a specific type of operation. It is heated on heating elements 21 or cooled on cooling elements 20. This heated or cooled air then flows directly to tank 4, on walls 16 of which he gives up his heat, or from the walls 16 of which he extracts heat. The cooling elements 20 and the heating elements 21 are provided with rigid plates having good thermal conductivity to form heat-producing surfaces. A freezer 24 is installed on the upper section of the heating and cooling chamber 2 and is largely isolated from it by means of thermal insulation23, which is made in a regular fashion. It has a cylindrical body 25, in which a gear-blade mechanism 28 driven by a driving motor 26 is installed. Through a gear 27, a blade-grinding mechanism 28 is installed. On the remote side of the cylindrical body 23 is installed a cooling jacket 29 equipped with cooling channels, which is connected to a refrigerating housing 1 installed under the heating and cooling chamber 2 unit 30. This unit 30 serves, in particular, for providing cold cooling elements 20 in the cooling and heating unit 19. The cooling jacket 29 is surrounded agrevatelnoy jacket 31 in which the heating elements are mounted (not shown). At the end of the cylindrical body 25, namely, at the end of the cylindrical body 25 located approximately in the corresponding wall of the housing 1, there is a faucet 32 for collecting ice cream from the freezer 24, which is driven by the actuating member 33. an inlet chamber 34 is installed for the freezer 24, into which the feed line 35 consisting of flexible material is included. Lastly, when the pump 36 is switched on intermittently, it can be connected to the outlet 6 with shut off the valve 7 of the tank 4. On passing from the inlet chamber 34 to the cylindrical body 25 of the freezer 24, i.e., directly to the freezing chamber, a retaining disk 37 is provided, which is rigidly connected to the shear-and-blade mechanism 28. A pipeline 38 of compressed air is connected to the top of the inlet chambers 3. The supply line 35 through the level 39 regulator of the initial ice-cream mixture enters the inlet chamber 34. If the level of the initial ice-cream mixture in the inlet chamber 3A reaches the height of the level 39 regulator, then the source ice-cream mixture with a bypass flows through the outlet line 14 back into the tank 4. The entrance chamber 34 (Fig. 1), located in the heating and cooling chamber 2, is heated or cooled from it. On the one hand, the freezer 24 is supplied with compressed air and the tank 4, on the other hand, by means of a motor-compressor 40, which sucks air through the intake filter 41 and supplies compressed air through the corresponding pipeline 42 through the non-return valve 43 and the drying and sterilizing installation 44 of compressed air in the tank 45 compressed air ha. From the tank 45, the compressed air enters through the pipe 38 into the freezer 24 and through the pipeline 12 of the cut air into the tank 4; On the compressed air tank 45, a pressure switch 46 is normally installed. The pasteurization of the initial ice-cream mixture throughout the installation takes place by heating the cylindrical body 25 of the freezer 24 with heating shirt 31. At the same time, the feed pump 36, as a result of which the initial mixture of ice cream is passed through by overflow through the falling line 35 and the outlet line 14, since there is no subsequent supply to in view of the absence of the intake of ice cream from the intake tap 3, the initial ice cream mixture is withdrawn from the distribution tank 17. The ice cream mixture flows to the inside of the walls 16 and flows down, resulting in a particularly good and uniform heating. chamber 34 is also installed in the heating and cooling chamber 2, and it is also heated from the outside by hot air in the same way. . The cooling or freezing process takes place by supplying to the cooling jacket 29 of the freezer 24 a refrigerant from the refrigeration unit 30. The refrigerant is also supplied to the cooling elements 20 of the cooling and heating unit 19, therefore the air supplied by the recirculation blower 22 is strongly cooled. Firstly, it cools the walls 16 of the tank 4 and thereby its contents, and, secondly, the supply line 35, the discharge line 14 and the entrance chamber 34. In order to achieve especially good heat transfer in the cooling mode, constant work is advisable with an overflow of the feed pump 36 for the constant circulation of the contents of the reservoir 4. During such a circulation, the excess flow discharged through the distributor plate 17 flows to the inner side of the walls 16. The main difference of the shape of the device of FIG. 2 and 3 from the shape of FIG. 1 consists of the fact that the tank 4 is installed above the freezer 24 and cannot be removed from the housing 1. The housing 1 has for this purpose a well-insulated cover 47 on its upper side, which closes the heat exchange chamber 2. In front of the cooling and heating unit 19, a recirculation blower 22 is also installed with air guide sheets 51 for blowing air cooled and heated in the cooling and heating unit 19 by first the walls 16 of the tank 4, including the cover 9 and the bottom 5, and returning it back to the circle past a freezer 24 to the recirculation blower 22. A cooling unit (not shown) is provided under the heat exchange chamber 2 in the housing 1. In the embodiment of the device according to FIG. 2 and 3, a pumping system may be provided. As a result of the heating by air, it is generally possible to avoid temperatures substantially exceeding 80 ° C. The interval of temperature and residence time of the mixture in the storage tank is significantly less than by a known method, which means a slight, almost imperceptible effect on taste. In addition, pasteurization in one part of the device does not give rise to heat due to an increase in the temperature of the other part. In this way, it is possible to avoid increasing the temperature, which is not sufficient for pasteurisation, but sufficient for the multiplication of bacteria. By virtue of the proposed type of heating, not sparingly gentle, but also a particularly uniform heating of the mixture is created, and thus a favorable pasteurization process.
